How to change career?

My partner is currently a chef, now, he is working long hours on his feet etc and is also diabetic. This career is really taking its toll on his health and in the last couple of months he has been admitted to hospital and is back and forth to the doctor with infections, stress...you name it.

I have helped him write killer resumes and letters to employers in different sectors so he could maybe get a more normal 9-5 sort of position. However, its not working.

What would be the best way to get your his foot through the door without making it sound like a sob story or without too much desperation???How to change career?
Well you dont say which kind of employment he has been going for so it is hard to suggest ways to get his foot in....unless he is just going for office type jobs...is he getting to interview? If he is then something is wrong in his presentation...if not then his CV's aren't killer.

Why can't he go to college to re-train? Or start his own catering business? How to change career?
It will sound bad but how about telemarketing or teleservices - the pay is good, they are all over the nation, schedules are flexible, they will take into consideration health reasons and make accommodations, most you don't need experience!
by opening the window of your brain you can change any thing
